Congratulations and welcome!
I'm sure some folks will post with modification info and the search function works fairly well too. Wunderlich makes some nice stuff, but at the higher end of the $$ range.
A bunch of HD riders are here and can offer some comparison information and while both Brands offer something the other doesn't, I think you'll find commonalities in fit and finish, quirks and a bunch of fun to be had. The R18 handles very well (within obvious design parameters), and the engine has several sweet spots in the RPM range so don't be afraid to stretch her legs as she has the torque to be quite happy easing away from a stop without having to add throttle or up to very aggressive riding nearing upper 4-5Ks RPM range. She smooths out considerably over the first few thousand miles and the MPG will go up significantly too.

Congrats and welcome aboard... I can't help you on the sissy bar question; I agree, Wunderlich produces high quality for a high price... Still though, Wunderlich is far cheaper than a new wife ...

I too just bought an R18B and got a Wunderlich sissy bar.. total cost including shipping and duty to Alberta $1,200 CND. Perfect fit, excellent materials ( match the stock seat and fairing material.) and riders say it feel secure and comfortable.
I was able to attach it without removing any of the bag wiring by setting the bags on boxes off the ground during installation.
Expensive but truly excellent product.
