Upgrade saddle bag speakers

Why..? You're going to be limited in terms of space if trying to make an improvement from the OEM Marshall speakers; the rear speakers really only add some additional bass, which at 70 mph isn't going to make a difference.

An improved speaker will most likely require a larger magnet, which will not fit within the existing speaker frame of the case... Furthermore, finding a high quality speaker which also is rated for outdoor use is rare.

You're going to wind up cutting the inner case mounting frame, which is going to look like ass, remove any protection to the speaker from contents within your side cases and it isn't ever going to match the high fidelity sound of your home studio or modern vehicle cabin...

I second Scott’s recommendation.
The Marshalls are a good set. I don’t wear earplugs and ride open face all year round. In the winter I just add a face mask. At 70mphs I can still hear my music reasonably well, although I have to pump up the volume almost to the max. I pump up the volume on my phone until it is maxed out and then control the bike volume accordingly. I use the Bluetooth connection and I don’t have any issues.
